Sharing the recipe for this Curry Chicken Salad Sa

Sharing the recipe for this Curry Chicken Salad Salad is literally my favorite activity (eating it is my second favorite activity) 🥰

|| Loose Recipes Notes ||
. Season two boneless chicken breast pieces with paprika, curry powder, turmeric, kosher salt, and pepper.
. Bake for 35-40 min at 400 degrees until fully cooked.
. Allow them to cool before coarsely chopping and mixing with about 2-3 tablespoons mayonnaise and greek yogurt, 1 tablespoon dijon mustard, and a drizzle of maple syrup.
. Add chopped celery (and red onion if you’d like) and season the mixture with your favorite curry powder blend and more turmeric for added color. Toss in halved grapes.
. Serve chicken salad over a bed of greens and microgreens and add pecans and cucumbers.
. Top with your preferred dressing. Mine is a creamy herb balsamic vinaigrette (olive oil, balsamic vinegar, mayonnaise, dijon mustard, honey or maple syrup, lots of fresh herbs, and salt and pepper)

A few honorable mentions: sometimes instead of cucumbers I’d toss in some watermelon radishes. I’ve also mixed in radicchio and/or butter lettuce. If you’re out of grapes, raisins or dried cranberries will work but I don’t think they compare to fresh grapes. I’ve been known to shamelessly make a special trip to the store just for grapes to add to this salad.
