Ingredients
- 2 tablespoons ground coffee
- 2 teaspoons sugar
- 2 teaspoons kosher salt
- 1 1/2 teaspoons allspice
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black peppercorn, crushed
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- Whole chicken, cut in parts (or 2-3 pounds of bone-in chicken pieces)
- Olive, canola or vegetable oil
Instructions
- Combine ground coffee, sugar, kosher salt, seasonings, garlic, and ginger and coat chicken pieces. Transfer to a bowl or plastic ziplock bag and brine in the refrigerator for 12 to 24 hours.
- Bring to room temperature for about 30-40 minutes before cooking. Drizzle with oil and bake in the oven for about 50 minutes to 1 hour until done. Serve with lime wedges.
