pumpkin spice granola
Ingredients
- nonstick spray
- 1/4 cup shredded coconut, unsweetened
- 1/2 cup walnuts
- 1/2 cup pecans
- 1/4 cup pumpkin seeds
- 3 tablespoons sunflower seeds
- 2 tablespoons flaxseeds
- 1/8 cup brown sugar
- 1/4 teaspoon kosher salt
- 1 1/2 teaspoons pumpkin spice (or make your own: 3/4 teaspoon cinnamon + 1/4 teaspoon ground ginger + 1/4 teaspoon nutmeg + 1/8 teaspoon allspice + 1/4 teaspoon cloves)
- 1/4 cup canola oil
- 1/2 cup maple syrup
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 3 cups old fashioned rolled oats
- 1/2 cup dark raisins
- 1/2 cup golden raisins
- 1/2 cup dried dates, chopped
Instructions
1 ➵ heat oven to 250 degrees farenheit. coat a baking sheet with nonstick spray.
2 ➵ in a medium mixing bowl, mix nuts and seeds – coconut, walnuts, pecans, pumpkin seeds, sunflower seeds, and flaxseeds.
3 ➵ in a large mixing bowl, mix brown sugar, salt, pumpkin spice, canola oil, maple syrup, honey, and vanilla. add nut/seed mix and toss to coat with the liquid mixture. toss in oats and continue stirring until the ingredients are combined.
4 ➵ spread the mixture onto the prepared baking sheet and bake for 20 minutes. using a spoon, toss the mixture around on the pan and bake for another 20 minutes until the granola is slightly browned. cool 5-7minutes and then transfer to a clean mixing bowl and mix in raisins and dates. transfer to a mason jar or airtight container and store at room temperature for up to a week.
