Vegan Blueberry Oat Pancakes
Ingredients
- 1 tablespoon flaxseed
- 1 ripe banana
- 1/2 cup old-fashioned rolled oats
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla
- Pinch of kosher salt
- 1/2 cup blueberries + extra for serving
- 1/2 tablespoon coconut oil, for frying
- maple syrup, for eating
Instructions
- Make a flaxseed egg: Mix flaxseed and 2 and ½ tablespoons
water in a small bowl and allow to sit for 15-20 minutes. - In another bowl: Mash banana and add oats. mix in flaxseed egg, cinnamon, vanilla, and salt. toss in blueberries. Divide mixture into 2 (or 4 for mini pancakes).
- Heat coconut oil in a small skillet over medium heat. once hot, add one portion of the mixture at a time – you'll probably need to scoop the pancake mixture into the pan and form them while they cook using a spoon and/or spatula.
- Fry for about 3-4 minutes on one side and 1-2 minutes on the other. The pancakes will still be pretty delicate right out the pan – they will stiffen a bit as they cool. Serve with more blueberries and maple syrup.
